In Bake Off: The Professionals, teams of seasoned pastry chefs from upscale hotels, restaurants, supermarkets, the armed forces, and other businesses and organizations compete in the series.
Finding the best pastry chefs in the nation who can transform the ordinary into the extraordinary and make desserts with “stunning visual impact, texture, and great flavor” is the goal of the competition.
Pastry chefs were divided into teams for the competition; for the first two series, each team had three pastry chefs, one of whom served as team captain. Starting with the third series, two-person teams competed. The three teams compete in two challenges during the heats, receiving scores from the three judges for each of their designs.
The team with the highest overall score after both challenges advances to the semifinal round. The team that finished first overall across all of the heats is also guaranteed a spot in the semifinal.
Bake Off: The Professionals Preview
There are two tasks in each episode. In the Miniature Obstacle, each team in this challenge must produce a batch of three different kinds of miniatures. Only three hours will be available to make all 108 pastries, and they must all be uniform in appearance and finished to the highest professional standards. A total of 90 points are available, with a 30-point scale for each miniature.
The miniature challenge might be replaced by other tasks. For one of the heat rounds, there might be a secret recipe challenge in which the competitors are not informed in advance about the bakes they must complete and are only given the recipe the day before they begin baking.
In the Outstanding Challenge, each team is required to reimagine a well-known British dessert and present it as a fine-dining showpiece in this challenge. A total of 150 points are available, with 50 points available for each judge.
From the first to the third series, the format was different.
The first season featured 15 teams, three teams in each of the five heats, and a wild card from each heat. The winning team in each episode was guaranteed a spot in the semifinals. From the two semifinal matches, three teams were chosen to compete in the championship game.
Ten teams were split into two groups of five for the first episode of the second series. Before the semifinal, one team was eliminated in each of the two sets of three heats.
The final is contested by the two semifinal winners. Starting with the third series, there were twelve teams competing, divided into two groups of six, and once more, one team was eliminated after three sets of heats. The remaining six teams, three from each group, then competed to advance to the semifinal, where three teams would face off against each other in the final.
